You could eat the eggs yourself or sell them at local markets. Or go bigger and raise pigs.
Build a shed and rent it out as storage. Or put up solar panels and reduce your electric bill.
Let someone park their trailer there and charge them rent.
If it’s easy to access, rent it out for boat or shipping container storage.

It’s basically renting out your backyard for people to let their dogs run around. Super popular with dog owners who don’t have space or live in apartments.
Start a fruit tree nursery. Something like exotic or native trees can bring in good money. I’ve had success with mulberries and figs, and it’s not hard to maintain.
